It is Official! Elote is Open for Dinner!

Tulsa’s true local, organic restaurant is now officially open for dinner. Now I finally have a restaurant that meets my sustainability requirements to frequent for dinner. On the occassions that I have been able to break away from the store and make it over to Elote for lunch I have fallen in love with many dishes like the Fish Tacos, Blackened Chicken Wrap, and the Three Springs Farm Salad, but what I am truly addicted to is the White Queso, my mouth is watering just thinking about it (I know where I am going for dinner). Elote is now open Tuesday - Thursday until 10pm and on Friday and Saturday until 11 (except lunch is only served on weekdays).  So hop on down to Elote at 514 South Boston for some delicious, healthy, sustainable food!

Diaper Service: An Opportunity for a Tulsa Business Venture

Since we opened, almost a year ago, I have had many inquiries about a diaper service. Diaper services were common place 50 years ago, but as disposables became available and grew in favor these services slowly dried up. Many states held on to a few of their services, not so with Oklahoma. Rumor has it that there was a diaper service about 5 or 6 years ago, but I have yet to confirm this with anything but hearsay. As today’s parents are becoming more and more conscious about the waste their baby generates, the health of their little bottoms, a need to reduce our dependence on oil and the wasteful usage of our trees, a need to reduce environmental contamination and carbon outputs created by the disposable industry, and the economical advantages of cloth they are seeking diapering alternatives. We are definitely witnessing a resurgence of the cloth diaper which is evidenced in green baby stores like Lundeby’s Eco Baby popping up all over the country and all across the web. New innovations to cloth diapers have made them much more user friendly, like the one size Econappi pocket diaper by Swaddlebees which is not only innovative and cute, but also the greenest pocket diaper on the market as it is made in the USA,  the cotton is 100% unbleached, undyed, super soft organic cotton, it grows with your baby, and the dyes used on the PUL are water soluble. A shift is happening, but there are still many who would love to cloth diaper… if only there were a diaper service. Calling all entrepreneurs and diaper services, anyone interested in a new business or expansion? So where would you start if you were to begin a diaper service? An excellent place is the National Association of Diaper Services. I would call around to some of the services in other states and ask questions, I would be upfront and say that I saw a need and was thinking of opening a diaper service in Tulsa, Oklahoma and ask them what they did to get started and if they could offer any tips. I would also contact the National Association of Diaper Services directly and get as much information from them as possible. If you pick up this endeavor remember re-using is great, but re-using organics is even better!

Greening the (918) Local Food and Sustainable Agriculture Seminar

Sustainable Tulsa and the Mayor’s Green Team’s Greening the (918) series continues January 27th, 2009 with Local Food and Sustainable Agriculture. Come and be a part of Tulsa’s movement towards sustainability. The seminar will consists of a panel of experts from the state who will address your questions about local foods and sustainability, a facilitated brainstorming session of the obstacles we face and how to overcome them, and ends with an action plan.

The Greening the (918) seminars are designed to stimulate discussion about where we are and how we are going to become a healthier, more sustainable city. The energy and ideas put into the session are then passed on to Greening the 918 members for action plan implementation and followup. Green Building, the first in the series, has already resulted in a Green Building Resource Center which will open to the public in February, the commitment of local Realtors and builders to help educate about green building, and media to cover topics including energy and water conservation and indoor air quality. Following the Green Building Seminar were delicious snacks (more like light dinner) provided by Elote. That was Green Building so I bet we can count on some sustainable goodies this time around too!

The Greening the (918) Local Food and Sustainable Agriculture Seminar will be held at the Centennial Center, 1028 East 6th Street in Tulsa on Tuesday January 27th, 2009 from 5:30 to 7:30pm.

A Week Has Passed… I Missed the Bus

Like many New Year’s resolutions my resolution to ride the bus to work and home one day a week is off to a bad start. I have not given up altogether though. Most of my failed intention is on me. I hope I do not offend anyone by this post, but my intentions are to be honest an forthright in all endeavors. While I have visited many cities an utilized their public transportation and never thought twice about it (except to make sure I was getting on and off at the right place), using public transportation in Oklahoma feels so awkward… and I feel disgust rising in my body for feeling that. Even walking to get from one place to another in Oklahoma feels awkward… and that is even more disgusting. But we, or at least I, have to face the culture in which I was raised and fight it. Part of the fight for me is being honest about where I am so that I can make true improvements to my psyche and my actions. The honest truth is that growing up I had no problem with walking all over town, but once my friends started getting cars my legs became obsolete and besides school buses and airplanes I have never used public transportation in the state. I don’t imagine myself too out of the ordinary here for those of us raised in Oklahoma (this is not the part of normal that I have ever longed for). Needless to say I have many mental blocks which I must overcome to get on the bus. My car to me means independence and freedom which has always been a big deal to me, but as I have recently realized FREEDOM, at least in most circumstances, is a state of mind. Being able to ride the bus is a freedom, choosing to ride the bus is a freedom, no one is forcing me. I want ride the bus because I know that if we all used public transportation it would improve dramatically then more people would use it and emissions would be lower and we and our world would be healthier.

I can’t do anything about anyone else but I can “be the difference I wish to see in the world” which is what I try do do with my life. Try being the operative word as I am FAR from perfect. Back to the bus, another block is that I am slightly afraid of the bus stops by my house and the walk to them. This is something else that I am embarrased to admit, but that is the way it is at the moment. I don’t live in the worst neighborhood, but it is also not the best. I feel safe walking the dogs through the neighborhood streets, but standing alone on Yale, Sheridan, 21st, or 31st is not the most comforting thought. For mine and my husbands peace of mind I may have to wait until mom is visiting to start this journey so that I will not be alone. Now that I have covered my own flaws that have prevented me from fulfilling my New Year’s resolution this week I must say that Tulsa Transit does not make it easy. First the website could use some organization (of course I am no pro at it so don’t look to me for answers as to how), then the maps and schedules could be explained a little more clearly (agian not my strong suit), we could stand to have a few more stops, and finally I know I have seen more stops than are identified on the maps. From there many of the stops are without shelter which is not cool on bad weather days. Many more improvements could be made, but budgets are not endless so these will do for now.

The Year in Review

This morning I have been contemplating the past year and what a year 2008 turned out to be. This time last year I was all bundled up in Yellowstone National park with Jeremy and my mom and dreaming of snowshoeing. New Years Eve day we departed Grandma’s in Laurel, Montana and drove a couple of hours to Yellowstone. We had plans of taking the snow coach from Mammoth to the Old faithful Snow Lodge, but we arrived at the park early and the roads were clear enough to make it from Mammoth to Cooke City which is the most beautiful drive through the park so we decided to stay the night in Mammoth and make it back to Laurel and spend more time with Grandma. Speaking of Yellowstone and nice drives make sure to take the Bear Tooth Highway from Cooke City to Red Lodge, but you must plan wisely as the Bear Tooth Highway is closed until late spring. This time last year the idea of a store was arising in conversation from time to time, but it was more of a day dream than anything. I was excited about preparing for pregnancy: detoxing my body and the house and growing a list of eco friendly baby gear. I stocked up on glass and stainless containers to replace the plastic we had in the house and have learned to live with less plastic. I still struggle to always bring a container with me when dining out and stopping for tea or coffee. I completely failed to follow the Body Ecology diet for 1 year, actually I don’t think I even technically made it through the first week. I have, however, drastically reduced the gluten I intake and have incorporated Body Ecology - like dishes into my cooking repertoire. We removed the wall to wall carpeting and have bamboo in the living room, stained concrete in the dining room and hallway, and bamboo in one of the bedrooms, the other two bedrooms are painted concrete and will eventually have some bamboo.

We live 4.6 miles form the store and 3.3 miles from Jeremy’s office. I would like to bike to work, but my path down 36th seems a bit treacherous for my uncoordinated biking not to mention my hippie deodorant that does not hold up to vigorous exercise and the lack of a shower at the store. I suppose I could wash up in the sink, but the point is that the goal of biking to work is a little too far off at this point. So for months now I have thought about riding the bus and have decided to make my new year’s resolution to take the bus to work at least one day a week. Tulsa, admittedly, is lacking in the public transportation department, but the more we use it the better it will get so Get On the Bus! Another resolution of mine is to do the Lemonade Master Cleanse again and I plan to blog about my Journey both on the cleanse and the bus.

Well the ecologically responsible living store turned into reality, except that our purchasing budget did not let us get past baby, except for the Earth Weave Carpet and Rugs. The Lundeby’s Eco Baby website is functional and Jeremy is hard at work trying to get the registry basket coded correctly so that store registries can be accessed online. The store is now 9 months old and I am finally getting the hang of riding the retail roller-coaster (I think). A few months ago I was not sure that I was going to make it and thankfully mom came to the rescue. For a moment I felt as though I had completely lost my freedom and that I was being suffocated by the store. I was exhausted by the time I got home and started to resent the store for taking all my time and energy. Since then I have come to the realization that freedom is a state of mind and have gotten back to focusing on the positive; consequentially I have much more energy and am able to take care of the store and the house and enjoy life. My new perspective also includes me viewing myself as an employee of Lundeby’s Eco Baby rather than combining our identities.

In 2008 we also added two dogs to our family, Oliver and Tea so it is now Jeremy, me, Fatso, Oliver, Tea and Lundeby’s Eco Baby. In my wildest imaginations, I would have never imagined myself sitting in a beautiful organic baby and toddler store that Jeremy and I helped to create, blogging, working on Pandora stations that are store appropriate, sipping tea while two dogs tore up the back yard and Fatso lazed around the house (well I did expect Fatso to still be a lazy rabbit) on December 31st 2008.

And the Heat Goes On

It is a cold, rainy day and I walked into a store that was a chilling 58 degrees. After listening to Jeremy complain about the frigid store on Saturday I decided the heat must go on. A few years ago I would not have thought twice about it; if I am cold the heat goes on and if I get hot switch back to the air conditioner. Now almost everything I do seems to be a battle between comfort and conscious and running a green baby store adds a whole other dimension. I have images of selling clothing and toys by candle light and warning people to come bundled up and serving hot cocoa (warmed by an open fire of course). I don’t think it is such a bad image but the reality of it does not work so well. No matter how much I torture myself at home, I expect comfort when I am out and about and find myself complaining when I am in a store that is too cold or too hot. So the heat is on, it is set at 67 and that is where I can find moderation; at least until I see someone uncomfortable in the store and the people pleaser in me pops out and adjusts it up a notch. At least the heat is natural gas which is the cleanest burning fossil fuel and produces less CO2 and we do purchase carbon offsets. But lets not just stop at that we all need to challenge ourselves to keep up the fight and do what we can to change the world for the better.
